Apple Ridge is owned by Brian and Lisa Bruno and is made up of a group of hard-working people who are dedicated to producing the best food possible in the most sustainable way possible. Damn Good Chicken is just what the name says. From the chickens we use, to the care we take in preparing them, to the joy we take in serving them to you, our goal is to make your whole experience with us a Damn Good one.
We prepare our chicken in the style of Cornell Chicken BBQ. This method, developed at Cornell University in the 1950s, involves marinating our chickens in a mix of vinegar, chicken fat, fresh herbs and our secret spice blend. After 24 hours in the marinade, we grill our chickens over natural hardwood charcoal, continuously basting the chickens with the marinade to develop an irresistibly moist & smokey chicken with extra crispy skin.

Nicola’s Pasta Fresca creates fresh pasta reminiscent of those made in Italy. Each Sunday as a young boy, Nicola would make fresh pasta, homemade breads and pizza from scratch with his grandmother. She taught him traditional Italian cooking methods as were passed down to her before.
His love of cooking continued to grow from there. He attended the Italian Culinary Academy in Parma Italy, where he received a Grand Diploma Degree. While in Italy Chef Nicola worked side by side with the finest Italian Chefs. There he learned different techniques of making fresh pasta. He has brought those traditions and what he has learned to create Nicola’s Pasta Fresca.

Top of the Mountain Honey Bee Farm Our bees are busy gathering pollen all spring and summer from the extensive wildflower fields found throughout scenic Highland Lakes, NJ, and transforming it into “liquid gold.”
In early summer, we begin the time-honored art of “harvesting” the honey. It is removed from the honeycombs, strained to remove small pieces of sediment and wax, bottled and labeled.
Referred to as “nectar of the gods” since ancient times, pure honey has been used to treat a wide variety of illnesses as well as heal wounds and enhance beauty.
